Whisky Words: Chill Filtration

Chill filtration is a method used in whisky production to remove certain compounds, such as oils, esters, and proteins, that can cause the whisky to become cloudy when it is chilled or when water is added. To achieve this, the whisky is cooled to temperatures close to 0°C (usually between -10°C and 4°C) and then pressure-filtered through fine meshes.


This process is mainly used for aesthetic reasons, to prevent cloudiness in whiskies with an alcohol content below 46% ABV. The goal is for the whisky to remain clear even at low temperatures. According to Scotch whisky regulations, chill filtration should not be used to remove components such as the whisky’s color, flavor, or aroma.


Factors that affect the chill filtration process include the temperature, the number and size of the filters used, and the speed at which the whisky passes through them. A slower process with more filters captures a greater amount of particles from the spirit, but it also increases the cost.

Bottom line: Chill filtration should only be used to prevent cloudiness. It should not be used to remove the whisky’s color, flavor, or aroma. Its use remains a subject of debate between aesthetics and authenticity.
